Ryan was drafted by the Baltimore Orioles in the first round of the 2015 MLB draft. After signing a contract with the team, he began his professional career with the Gulf Coast League Orioles.
Afterward, he was promoted to the Aberdeen IronBird and spent the 2016 season with the Delmarva Shorebirds. He split the 2017 season between the Frederick Keys and the Bowie Baysox and played with the Salt River Rafters in the Arizona Fall League.
Mountcastle played with the Bowie Baysox in the 2018 season. Moreover, he spent the 2019 season with the Norfolk Tides.
Following the season, he was added to the Orioles 40–man roster and was promoted to the major leagues on 21 August 2020. On the same day, he made his MLB debut against the Boston Red Sox.
