Phillip played as an outfielder and pitcher in college baseball for the Samford Bulldogs baseball team while in the University. He played for three seasons from 2011 to 2013. In the 2013 season, he became a Perfect Game Second Team All-American and a Third Team All-American by Baseball America.

Ervin was selected by the Cincinnati Reds with the 27th overall selection in the 2013 MLB draft. He began his professional career with the Billings Mustangs of the Rookie-level Pioneer League. After the 2016 season, the Reds added Ervin to their 40-man roster. His had a remarkable stats in 2018, with a .252 average, 7 home runs, and 31 RBIs.

Phillip signed a contract with the Reds in 2013 with a $1,812,400 signing bonus. According to his current contract, he earns an annual average salary of $555,000.
